Sample Recipe: Broccoli Cheddar Soup

Makes 4 Servings / Prep time: 10 minutes / Cook time: 20 minutes

A lot of soups like this one usually start with some butter and flour to thicken it up, but I’ve found that if you skip the flour it really doesn’t make a difference, especially if you use heavy cream instead of regular milk. This soup is warm and nourishing and, more importantly, keto friendly.

Directions:

1. In a large saucepan over medium heat, melt the butter.

2. Add the celery, carrot, onion, and garlic. Stir to combine and sauté for 5 to 7 minutes until softened.

3. Stir in the chicken broth and bring to a simmer.

4. Add the broccoli. Simmer for 5 to 7 minutes then add the cream.

5. While stirring, slowly add the Cheddar, letting it melt completely. Season well with salt and pepper and serve hot. Refrigerate leftovers in an airtight container for up to 1 week.

1 celery stalk, diced

1 carrot, diced

½ onion, diced

1 garlic clove, minced

3 cups chicken broth

2 cups broccoli florets

1 cup heavy (whipping) cream

2½ cups shredded Cheddar cheese
